Egg Entrees


Creamed Eggs & Mushrooms

Ingredients:
3 cups no-fat half and half
1/2 packet dry butter buds
3 Tbsp flour, white or whole wheat
1/8 tsp grated nutmeg
salt
freshly ground pepper to taste
dash Tabasco sauce
12 hard boiled eggs, cooled and shelled
16 oz mushrooms, sliced
1 1/2 Tbsp. butter or non-hydrogenated margarine
cooking spray
3 oz. shredded low fat cheddar cheese

Directions:

  • Preheat oven to 350° F.                                                                                                                                          
  • Make a white sauce by whisking flour and butter buds into no-fat half and half (or condensed non-fat milk), then cooking over medium heat, stirring constantly until it thickens.                                                                   
  • Add the nutmeg, and salt, pepper, and Tabasco sauce to taste and mix.                                                                 
  • Sauté mushrooms in margarine or butter until done.                                                                                               
  • Cut eggs in half and discard six yolks and crumble the other six.                                                                            
  • Cut the whites into slices, then toss with the yolks.                                                                                               
  • Layer half the cooked mushrooms and half the eggs in sprayed 2-quart baking dish, then repeat with another layer of each.                                                                                                                                           
  • Pour the white sauce over all, and top with shredded cheese.                                                                                      
  • Cover and bake for 25 minutes.



Exceptional Omelet

Ingredients:
2 whole eggs & 3 egg whites
2 Tbsp. non-fat half and half
1/8 tsp salt
4 oz. low fat cream cheese
1 cup crushed pineapple, drained
cooking spray

  • Mix cream cheese and pineapple, being sure pineapple is well drained first.                                                                     
  • Spray 10" non-stick frying pan.                                                                                                                                       
  • Whip eggs, salt, and half and half until quite frothy.                                                                                                  
  • Set heat to medium low -- you want the omelet to cook slowly.                                                                                 
  • Pour into pan and cover.                                                                                                                                    

Note: When the eggs are set, spread half of the omelet with the cream cheese mixture and flip the other half over it. 


Suppertime Egg Scramble

Ingredients:
1 cup thinly sliced onions
2 cups frozen hash browns
1 cup chopped green and/or red bell pepper
1/2 cup chopped fresh tomatoes
3/4 cup sliced mushrooms
1 Tbsp. canola or olive oil
1 tsp, canola or olive oil
1 cup shredded low fat cheddar cheese
1/2 cup finely chopped low fat ham
2 whole eggs and 3 egg whites, beaten
Salt and freshly ground pepper to taste

Directions:

  • In a very large frying pan, sauté onions in 1 Tbsp. oil until transparent.                                                             
  • Add salt, pepper and hash browns and cook and stir over fairly high heat until brown.                                           
  • Remove from pan.                                                                                                                                         
  • Add 1 tsp. more of oil, mushrooms, and peppers to pan, and stir-fry until crisp-tender.                                          
  • Add potato, onions and chopped ham to pan and mix all together.                                                                      
  • Turn heat to low and pour beaten eggs evenly over top.                                                                                        
  • Cover and cook over low heat until eggs are set.                                                                                                        
  • Sprinkle chopped tomatoes and shredded cheese over top. 


Seafood Quiche

Ingredients:
6 ounces fake crabmeat
1 whole egg plus 3 egg whites
2 Tbsp. grated onion
2-1/2 cups 1% milk
4 oz. fresh mushrooms
1 Tbsp. canola oil
3/4 cup low-fat Bisquick
1 Tbsp. dry butter buds
3 oz. low fat Jarlsberg cheese, grated
1/8 tsp. grated nutmeg
1 Tbsp. lemon juice
salt & freshly ground pepper

Directions:

  • Heat oven to 350° F. and spray a 9" pie pan with cooking spray.                                                                            
  • Cut "crabmeat" into small pieces and toss with lemon juice and grated onion.                                                          
  • Sauté mushrooms in canola oil, remove from heat, and mix in the dry butter buds.                                             
  • Beat eggs; add milk.                                                                                                                                            
  • Then add the rest of the ingredients.  Pour into pie plate and bake about 35 to 50 minutes until it tests done.                                                                                                                                                                          

Note: It will be puffy.                                                                                                                                               

  • Let sit 10 minutes to firm up before serving.



Seafood Quiche

6 ounces fake crabmeat

Broccoli & Ham Quiche

Ingredients:
1 whole egg plus 3 egg whites
2 Tbsp. grated onion
2-1/2 cups 1% milk
4 oz. fresh mushrooms
1 Tbsp. canola oil
10 oz. pkg. chopped broccoli, cooked and drained
3/4 cup low-fat Bisquick
1 Tbsp. dry butter buds
3 oz. low-fat cheddar, (or veggie cheddar), grated
3 oz. low-fat ham, (or veggie Canadian bacon), chopped
1 Tbsp. lemon juice
2 tsp. Madras or Watkins brand curry powder
salt & freshly ground pepper

Directions:

  • Heat oven to 350° F. and spray a 9" pie pan with cooking spray.                                                                                           
  • Sauté mushrooms in canola oil, remove from heat, and mix in the dry butter buds.                                             
  • Beat eggs; add milk then add the rest of the ingredients.                                                                                         
  • Pour into pie plate and bake about 35 to 50 minutes until it tests done.

Spinach & Mushroom Quiche

Ingredients:
10 oz. package chopped spinach
1 whole egg plus 3 egg whites
2 Tbsp. grated onion
2-1/2 cups 1% milk
4 oz. fresh mushrooms
1 Tbsp. canola oil
3/4 cup low-fat Bisquick
1 Tbsp. dry butter buds
5 oz. low fat Jarlsberg cheese, grated
1/8 tsp. grated nutmeg
1 Tbsp. lemon juice
salt & freshly ground pepper

Directions:

  • Heat oven to 350° F. and spray a 9" pie pan with cooking spray.                                                                         
  • Stick spinach in the microwave for 5 minutes and drain it thoroughly.                                                                    
  • Sauté mushrooms in canola oil, remove from heat, and mix in the dry butter buds.                                               
  • Beat eggs; add milk.                                                                                                                                              
  • Add the rest of the ingredients.                                                                                                                             
  • Pour into pie plate and bake about 35 to 50 minutes until it tests done.

Easy Omelet

Ingredients:
1 whole egg and 4 egg whites
1/4 Cup no-fat half and half, or 1% milk
1 tsp. corn starch
salt and pepper to taste
cooking spray

Directions:

  • Mix no-fat half and half (or milk) and cornstarch until blended.                                                                             
  • Beat egg and egg whites together with a fork, or whisk until fluffy.                                                                        
  • Add milk mixture and continue beating until combined.
  • Spray a large non-stick frying pan lightly with cooking spray, and heat to medium.                                              
  • Add egg mixture, cover and cook over low heat until set.                                                                                    
  • Add filling of choice, and fold over. 


Suggestions for fillings to be added:

  • Sautéed mushrooms and shredded low-fat or veggie cheddar cheese
  • Fried hash browns and onions
  • Cooked asparagus and shredded low-fat or veggie Swiss cheese
  • Shredded low-fat Monterey jack/cheddar cheese mix, top with warmed salsa and a dollop of sour cream
  • Any other of your favorite fillings or toppings
  • Check leftovers for any inventive filling
